Food Friday: Buttermilk Blueberry Breakfast Cake

As I’m first starting out with this blog, I’m going to try Food Friday. Whether that be a restaurant I can’t get enough of, or a recipe I found that I love. For this first Food Friday, I have the perfect way to begin your Saturday morning:

Buttermilk Blueberry Breakfast Cake

I found this recipe on Pinterest, and judged by the picture as I quickly placed it into my “Breakfast Food” board. Saturday mornings when I have nowhere else to be, I make my coffee, light a fall-scented candle, and sit on the couch cuddled with a blanket. Calm and relaxed before the day fully begins. Those other rare Saturdays when I wake up and want to accomplish 50 tasks before 10am, I look for a simple recipe to stick in the oven.

This recipe has come to be my favorite because you probably already have most of the ingredients in your house. And if you don’t, most of the items can be substituted. This specific time, I substituted lemon zest for a few squirts of lemon juice. I also made my own buttermilk by simply mixing milk and lemon juice, and letting it sit for 5 minutes.

Not to mention her food pictures are beautiful and make the food look like I could reach into the screen and grab it. Which I would if I could! That would be a whole lot easier than baking it myself. And actually, let’s revisit that thought again in another ten years once technology has improved more, shall we?

The best thing about this blueberry cake is the fact that it isn’t too sweet for early mornings. Just enough cakey, and just enough blueberry to put you in a good mood (after your coffee of course!).

Sprinkle some sugar over the top of the dough before you put it in the oven. And at the same time it’s like you’re sprinkling sugar onto your personality for the rest of the weekend. Because who doesn’t love sugar? I promise you won’t be disappointed. This recipe will be a hit for everyone who tries it.
